Vegetable Chicken Soup   

Servings: 4                                                                                        Prep time: 20 minutes



½ cup diced celery                                                     3 cups chicken broth

½ cup diced yellow squash                                         3 cups water

½ cup diced onion                                                       2 cups diced chicken, cooked

½ cup diced red or yellow pepper                              ½ cup sliced mushroom caps



Bring ½ cup water to a boil. Add vegetables and cook about 10 minutes on medium heat. Whisk in chicken broth and remaining water and gently simmer for 2-3 minutes. Add cooked chicken and mushroom caps. Simmer until chicken is hot throughout and mushrooms are soft.
